Hellrider  Would the 1 damage also be activated if Hellrider was the one to attack?

Yes, hellrider triggers when it attacks. It's a creature, and it doesn't say "other creature."

I forgot to ask.. I assume that this triggers for EACH creature that attacks since it doesn't specify that it's 1 damage only that one time, or does Hellrider only do 1 damage, even if attacking with, say, 3 creatures.

If you attack with three creatures, the triggering condition for Hellrider 's ability has been met three times simultaneously. It will trigger three times.
