I have Sorin, Lord of Innistrad and he has a spellskite and two other creatures on the battlefield. I use sorin's -6 ability and target his spellskite and the two other creatures. Can he redirect all three to the spellskite?

No. From the rulings on Spellskite's gatherer entry: If a spell or ability has multiple targets but doesn't use the word "target" multiple times, such as Fulgent Distraction , you can only successfully change one of the targets to Spellskite.

No, sorin's ability does not allow him to target the same permanent twice. So changing one of the other targets to spellskite would make it an illegal target and it doesn't change. If sorin's ability had targeted 3 other permanents and you had a spellskite you could then change one of those targets to spellskite (even if the target was a planeswalker).

Also, in the example Spellskite is already a target of the ability, so it can't be changed to spellskite.

Just because Spellskite is already a target doesnt necessarily mean you cannot change other targets to Spellskite (for example, Seeds of Strength ).

That makes no sense to me.
If they spelled the ability out on the card in full then it would not be allowed in a mono-black Commander deck, but because they used a keyword to save space it is allowed?

Yup, just like you can have Birds of paradise in a mono green deck but not Noble Hierarch . YAY COLOR IDENTITY
