If Ice Cave is on the Battlefield, can I get around it by paying the multi-kicker cost and getting it high enough that none of the other players will have enough mana to counter it ?

No, kicker is an additional cost. Additional costs are not part of the mana cost.

The mana cost is what's printed on the top right of the card.

Cards do what they say they do.  No more.  No less.
