My opponnent has a creature under his control that doesn't have summoning sickness. If I cast "Mind Control" on that creature and successfully transfer it under my control, will it have summoning sickness (I cannot attack with or tap it until my next turn)? Thanks in advance!

Yes.
A creature you control has summoning sickness if you have not controlled it continuously since the start of your most recent turn. Since you have only controlled it since mind control resolved, it has summoning sickness for the moment.

To clarify the rule, if your opponent was able to destroy the Mind Control that same turn, the creature would go back under his control, but would still have summoning sickness.
