If both Finest Hour  and Militia's Pride  were in play and I chose to attack with a singular creature, and then use Militia's ability, would Finest Hour still activate and give another combat step?

Finest Hour would still trigger, yes. You only declared one creature as attacking; the fact that more attackers come into play later doesn't matter. (For the same reason, if you declare two creatures as attacking and your opponent Terminate  s one of them, Finest Hour won't trigger.)
