With any of the hybrid monocolored cards, can I pay their minimum cost when discarding to [c]Knollspine Invocation[\c] but still deal the full six damage? Or would only what I pay be the amount of damage dealt?
Neither. When using Knollspine Invocation with one of the monocolored hybrids, you would have to pay 6, and it would deal 6 damage. Period. The converted mana cost of those cards is always the same; it's always 6.

You don't get a choice - the CMC for a hybrid card is the highest cost. For example, Beseech the Queen always has a converted mana cost of 6.

A card with monocolored hybrid mana symbols in its mana cost has a converted mana cost equal to the highest possible cost it could be played for. Its converted mana cost never changes.
