So it's your claim that every person wearing a death mask automatically has a death gaze?
No every creature with a death mask has some kind of negative energy attack though level drain ability drain theres a lot of stuff covered by a Death ward. You'll note I never used the word Death Gaze?

You'd get a check since they look like odd looking Goblins or Wolves, but only an expert would know what it meant.
Now answer every other creature on the list? Come on, I'm waiting for more cheating justifications for how spot solves all 
Shapechange generally makes you look like what your shapechanged into but even if it was a little off wouldn't you need spot to dertermine it looked different than other goblins and wolves?

Um. You're talking out of your behind on this one. You have no factual basis with which to say that every creature ever made or that will be made that has a deathmask has a death attack.

Sure, but you wouldn't know if it was a fluke birth defect or something else. You'd have no clue about the abilities.

I'mma gonna have tto weigh in that if something runs around with a skull for a head, it may be completely reasonable to assume it does some necormantic nastiness. In some cases, this is a red herring, The Bodak doesn't exactly fail to live up to it's appearance related expectations, however.
No, for a mosnter that lore will really be useful to know about, Look at Bog Hags and other infiltrator type creatures. Monsters that don't just shapechange, but shape change into something you might not assume is a threat. Barghest? The first few times we fought them, we thought they were just Hobgoblin base Were-Wolves and acted accordingly. As we had been in conflict with Goblinoids already, it wasn't really that jarring. I mean, it fights like a Hob or it fights like Wolf, depending on how it looks.
There are a goodly number of creatures that one might look at and go WTFITS? Those are where lores help.
I have an answer for you, it may even be the truth.

You are correct the ocasional exeption that I can't just figure out an opponent by watching it does not change Knowledge Planes into a Incredibly usefull skill.
Monster knowledge is never going to be a useless thing in D&D. 
The (on topic) issue I see with 5e skills as they currently stand is you could have a skill like 'Knowledge (Planes)' that lets you make checks to know about planar locations and monsters from them. You could also have a "Fey Otherworld Lore" that lets you make checks about fey creatures and the extraplanar realm they come from - which is wholly subsumed by Knowledge (Planes) - that is, strictly inferior. You could also have a skill like "Arcana" that the DM might let you roll anytime he'd let someone roll 'Fey Otherworld Lore' or 'Knowledge (Planes)' or 'Spellcraft' or several other potential skills.
The DM could try to make up for scope differences or overlaps by giving different skill different DCs - but that'd be delicate balancing act, and one that wouldn't help much if there's much potential to max out a skill.
Undefined skills and open-ended skill lists are just bad for balance that way.
