I'd advise using the quicksheets anyway, they're meant to be pretty disposable.

That's true, and in most cases that's what you would do. However, this is outside usual rules, this is preparation. We break the rules all the time in preparation in order to make things interesting.
If I round down both times, then the critter would lose a hit point of damage each time. I have to round up on the first or second die in any case to truly be an average. I choose the former since I feel monsters, when deciding if they should be more or less of a challenge, should be more and it makes more intuitive sense.
