what would be our ideal defender?

Shielding Swordmage 'cause nobody's going to miss the Barbarian with a melee attack and the name of the game will be keeping enemies away when you can and reducing the damage when they can't.

If he's going Dwarf, why not Hybrid with Cleric, have Battle Cleric's Lore for Armor and Hybrid Talent for Thaneborn? Regardless, Fighter, Paladin or Swordmage would all be fine.
