If I were to, lets say, build a deck that mills itself then uses harvest pyre with redirect to exile 20+ cards from my graveyard, then redirect it to my opponent, would that be legal, or can i only redirect to another creature?

just use Boros Reckoner or Stuffy Doll

Redirect doesn't get around targetting restrictions, you still need to target a creature with Harvest Pyre

use Spitemare or Stuffy Doll
or if it is in your budget Boros Reckoner
