I feel like Lhurgoyf's would DEFINITLY be hunted.

By the way, hard to balance a hunted creature whose abilities are not definitive...

I could see that. 

I also thought about "Whenever this creature dies, remove a card from target graveyard."  But I though it woul dbe weak, even if I gave them 4 1/1's.

This is a pretty neat combination of the two concepts. I don't know how strong it is, but I honestly prefer under-powered cards. It seems pretty balanced, though I'm sure there would be some casual players who hated it or something. I'm not sure if the tokens should be soldiers from a flavour perspective. I don't see soldiers desecrating graveyards and going on hunting trips for exotic death-beasts. I would prefer some sort of science-type hunters. People curious about how the Llurgoyf functions and using their graveyard shenanigans to test it, or something?

I was originally gonna have Human, but that seemed abusable and super weak  or Villager.  Trying to go for the "It attacked our town" torch wielding hunt, thus the graveyard desecration.

I like the science angle though, makes the flavor more interesting.

the main draw of lord of extinction is access to big numbers, which you can then use for other things (momentous fall rite of consumption) and this goyf does that just as well for less mana.

I would prefer if the soldiers actually helped the lhurgoyf grow bigger somehow. I wouldn't play a three mana lhurgoyf that gave my opponent three vanilla 1/1's anyway.

For each opponent, you choose one of those creature cards to be put in their hand, other creatures revealed are put into their graveyard, then they put the other cards revealed this way on the bottom of their library in a random order."

If I was pablo, I'd probably say - "Designate one of those creatures as Saffi, and another as Hans. Put Saffi into their hand and Hans into the graveyard."   
The problem with yours flop, is that it makes the goyf more powerful.
I wouldn't play a three mana lhurgoyf that gave my opponent three vanilla 1/1's anyway.

You can already do that with a regular lhurgoyf for just one more mana, and its not powerful.
