Why are the templates of Rebound and Meddle different?
As for why they were each printed the way they were, I couldn't say. As for why they still have different templates, there's a subtle mechanical difference.

Rebound says "target spell that targets only a player." If the spell no longer targets only a player when Rebound tries to resolve, it will be countered for having an illegal target.

Meddle says "target spell." Any spell is a legal target for Meddle, but Meddle will only have an effect if the target spell has a single target which is a creature at the time Meddle resolves.

Meddle also interacts differently with cards like Common Bond that have more than one but can target one creature multiple times.  I can't think of any such cards for players so that may be why they chose that wording.
