So instants that tap a creature must be cast before, or during combat step, BEFORE attackers are declared, to make them invalid for attack.

Tapping in response is useless.

No blocker declared
Titanic Growth cast +4/+4
Combat damage resolves.
Player is hit for 5

if you rush into declaring attackers without giving your opponent a chance to tap your creatures he can back you up

Nitpick: The action of declaring attackers cannot be responded to. When a player says "in response to declaring attackers," he really means that he is casting his spell during the declare attackers step. You are correct to say that this is too late to stop a creature from attacking.
